ORIGIN STORY

IN 2010, THE PAULS EMBARKED ON THE JOURNEY OF BUILDING AND OPERATING A BREWERY. THEY JOINED FORCES WITH CO-WORKER AND FRIEND, PRESCOTT SANDERS, AN AVID HOME BREWER, AND HIS WIFE SARA. TOGETHER THE TWO FAMILIES WORKED TO PERFECT SOME OF THE SANDERS’S FAVORITE HOME BREW RECIPES AND PRESCOTT BECAME THE BREW MASTER FOR DANNY BOY.

BOTH KP AND PRESCOTT HAVE ALWAYS ENJOYED EXPLORING A MYRIAD OF BEER STYLES, HOWEVER THEY ALWAYS FOUND THEMSELVES RETURNING TO THE ICONIC STYLES UPON WHICH THE CRAFT BEER INDUSTRY WAS INITIALLY FOUNDED. AS SUCH, KP AND PRESCOTT FOCUSED ON DIALING IN THESE TRADITIONAL STYLES SPECIFICALLY TO FILL THE GAP FOR SESSION BEERS WITHIN THE CRAFT BEER MARKET.

THESE FIRST RECIPES BECAME THE TRAINING DAY AMERICAN PALE, DANNY BOY AMERICAN BLACK ALE AND MISS GINGER WITTE URBAN WHEAT.

DANNY BOY STARTED AS A TRUE NANO-BREWERY, AT FIRST BREWING SMALL 5 GALLON BATCHES IN GLASS CARBOYS AND THEN GREW TO A ½ BARREL SYSTEM THAT COULD BREW 1 KEG AT A TIME.  AS THE RECIPES WERE FINALIZED AND DEMAND BEGAN TO EXCEEDED SUPPLY, THE DANNY BOY FOUNDERS SOUGHT A LARGER FACILITY TO HOUSE THE BREWERY. THEY HAD TO LOOK NO FURTHER THAN THE PAUL’S NEIGHBORHOOD.  DANNY BOY BROKE GROUND IN AUGUST 2013 AT THE LOCATION THAT WOULD ONE DAY BE KNOWN AS DANNY BOY BEER WORKS, IN THE HEART OF THE VILLAGE OF WEST CLAY.  IN NOVEMBER 2014, THE DANNY BOY BREW CREW, LED BY HEAD BREWER DUSTIN BROWN AND ASSISTANT BREWER DERREK HERRING, PROUDLY BREWED THE FIRST BATCH OF DANNY BOY BEER INSIDE THE NEW FACILITY AT DANNY BOY BEER WORKS.  

​When you visit Danny Boy Beer Works, you’ll see our brewery situated in the middle of the Pub. Only a chain link fence separates pub tables from our fermenting tanks and boil kettle. We believe our stark naked brewery set-up shows our commitment to remain true to the passion instilled into our team by our founders.  It’s all about the beer. We are quite proud to share all of the passion and expertise our Brew Crew brings to the brewery each day.

Whether you sit at a table just feet away from the fermenting tanks or at a table on our family-friendly second level, you’ll have an opportunity to watch our Brew Crew fuse its diverse experience with animated enthusiasm in its constant pursuit to create new beers and perfect the iconic styles upon which we founded Danny Boy Beer Works.

We encourage you to enjoy the Brew Crew’s creations from one of the 10 taps dedicated to Danny Boy beers.  You’ll also find 30 taps featuring a rotating selection of guest beers.

2014 the Pauls continued to build the brand and began plans to open a production facility in or near their home town of St. Clair Michigan.  The War Water Brewery project was launched. The production facility is slated to brew an assortment of house beers as well as all of Danny Boys core lineup to be distributed throughout Indiana and Michigan. Currently,  War Water, LLC has established a Nano Brewery (The Brewery Office) in St Clair Michigan.  The Pauls will continue with the development of the production facility and promote the Danny Boy Beer products.
